My number one would be suspension setup. It’s always been a given for me to get it set for me and the way I ride. Other than that I really mess with anything hand controls related. I’m really picky about grips, bar bends, and lever positions. I could ride a bike with a bent frame and not notice but it drives me nuts if my clutch isn’t in the right spot. I always run Renthal Kevlars, I actually put a set of ODI lock on grips on my bike just to try them but I wasn’t a fan. Took them back off after two rides and went back to the kevlars.

Pro taper Honda CR high bend and Scott thin grips, I bought a case of them when they discontinued them so I would not run out.

My next bike will be a KTM, so I can probably skip the chain.
On my previous KTM a steering dampener was essential.
I have a new 501s, the grips are off and Fasst Impact pegs are coming. Dampener doesn’t seem necessary.
It's the best advantage I've found in racing. I love watching them brake off the start in the first turn then I wait an extra second to brake.

Being 5’11 and 160lbs, I usually just adjust the clickers, sag at 105mm and I’m set. As I’m only a C class rider.
