Damn it Joe!

You're Making me hungry for some real food, eating all this packaged/ pre-made crap is getting old.

It sux to be restricted to one hand where you can't do anything, but it will get better & I'll fire up the pit

Nearly 80 degrees this week and it snowed this morning...winter is a fighter. Felt like some comfort food today. Blade cut pork chops simmering in cream of mushroom soup with plenty of portabellas and new potatoes. Crusty French bread for sopping. What are you fellas whippin' up?

Cajun chicken thighs on the grill, Mac and cheese, corn on the cob, spring salad. Would have been rib eyes but doc says cut down on the red meat. Said he figures there's a whole cow in my gut...minus horns and hooves. The way that kidney stone felt...I mighta ate them too.

Blackened Cajun thighs. Skin crispy, salty, spicy. Meat juicy and buttery. Yes, it's a shitty 20 dollar walmart grill. Saving for my new king of the back yard. Good grills ain't cheap.

No pictures because the evidence didn't last long but I did a tri tip reverse smoke.
Put tri tip in zip lock with Worcestershire sauce and a couple of green onions.
Sat in a sous vide bath for 8 hours at 140 (medium well).
Removed from bag and wiped clean.
Applied seasoning consisting of garlic and small amount of brown sugar based rub.
Chilled in ice bath for ten minutes.
Placed in smoker (using Hickory) at 235 degrees for 1 1/2 hour.
Very tender and fantastic flavor.
Best experiment yet.

My wife cuts up fresh white corn tortillas and frys them up in a pan of vegetable oil before serving. Garnish with cilantro, fresh advocado, cheese, and tortilla strips. We might throw in some hot hatch peppers next time. We make it different each time. Sometimes we put bell peppers in it. Sometimes corn. This time we did corn cobs.

I’ll post some pictures next time of her hatch green chili stew. We just use a recipe from the hatch green chili store on the internet. It’s so simple and absolutely amazing. I love green chili and this hatch green chili stew recipe is the best. We make it camping sometimes because it’s so easy and just tastes awesome.

Race day menu: my twisted version of dirty rice. Family won't eat real dirty rice with chicken livers so it's chicken and Cajun sausage...with black beans, bell pepper, and lots of onions. More of a Creole version ( Creole is Cajun made with whatever's on hand + peppers).

I need to share this recipe i found just googling.

Boneless Chicken breasts, Bell Peppers and squash.

Cut slits in the chicken breasts and stuff with peppers and sliced squash.

Season heavily with Italian Dressing, then top with Mozzarella cheese.

Bake at 375 for about 25-30min, (use meat thermometer to check internal chicken temps.)

I guarantee is will blow you away! and it is so simple. Try it, you will thank me later cool

Yeah it was great. I had chicken thawed out, and didnt know what to make with it. I lost track and was scrolling vital, and bam! The decision was right in front of my eyes. Who would woulda thunk that vital is a cook book too!?

Here is the Hatch Green Chili Pork stew my wife made last night. Uses Hot Hatch peppers we keep in our freezer each year. Flour tortillas on the side. My wife likes to put sour cream and cheese in hers to cool it down but I like mine just plain. I want all that spice and flavor!

Picked up some skirt steak, pablanos, red bells and onions. Marinated the meat for a day in lime, lemon, soy sauce, pineapple juice, garlic and cumin.

I check this thread about twice a month looking for something new to cook and it never fails to deliver.From your pumpkin seeds that the family loved to what looks like an awesome chicken tortilla soup,Hatch green chile pork stew!

Leftovers. Had a few burgers and chicken thighs in the fridge that needed cooking and a few of last nights onions and peppers left over. Wife gets some grilled chicken for lunch tomorrow but I tossed mine with some buffalo wing sauce. Couple onion rings and a ice cold Shiner Bock. Burgers are great with grilled onions and peppers.

Not to derail the thread but have any of you tried a griddle grill? I had a buddy send me action pics from his weekend cook and it got my wheels turning as the possibilities seem endless. He said that he’s never been able to cook a steak on an open grate grill as well as he can on the griddle.

Well wife made chicken paprikash and home made dumplings tonight. Damn I wish I woulda taken a picture. It was awesome.

I’ll see if I can get my wife’s recipe for the cheesecake. It’s lengthy. And it takes her nearly 8 hours to make it. All from scratch. I only request it on my birthday lol. That’s a days work for her!

Boiled and then thrown in this mix to soak for 20 minutes. Gallon of mustard, seasonings and 8 sticks of butter. Mix with a few gallons of boiling water. Throw in some links and veggies to soak it up.
