I love me some carne asada street tacos. When I was lucky enough to get married at the age of almost-40, the first decision we made was "Florida". The second decision was "tacos". I was very particular on how they should be prepared. Legit salsa, flank steak, cilantro, pico, and radish. Queso cotija and queso fresco. The salsa was most important. Bros, I'm something of a taco expert. I have probably eaten more tacos in my life than I have drunk glasses of water. (Wait; actually, I'm sure of that. 😆) Now, I haven't eaten tacos at every conceivable taco shop, truck, restaurant or Mexican-family household, but I've seen my fair share of all those. Got the motor together after work tonight. Thought I had an issue at first as the crank would spin but had more drag than it should. Checked the clearance and noticed it wasn’t centred in the case. A bit of work with the rubber mallet got it centered and spinning much easier. Didn’t take any photos of the process as I just wanted it to get it done tonight.
