The air you hear escaping is coming from the pump/gauge. Watch the gauge as you are disconnecting. You will see the needle fall to zero at the same instant you hear the air escape.

You are over thinking it. From the center of the range, + or - .001", is the min and max clearance. You have a .002" range the clearance can fall within and be acceptable.

Hard to see from the angle of the picture, but it looks like the front of the radiator is blocked by that big piece of body work to me. Those small holes drilled in the plastic are most likely not allowing enough air through the radiator.
