Tacos are later and they’re Rib Eye tacos, tonight. 
At the moment, it’s the end of the ride at the beach: OJ, Tequila & water back.

Mexican is starting to catch on over here lately. There's a spot in Tokyo I've been wanting to try that's run by a Japanese dude who lived in Mexico for quite a few years (speaks perfect Spanish) that's supposed to have killer tacos. Gotta justify the 2 hour train ride with an outing other than tacos, though.

The last shop i worked in we had a guy we called texas joe . He brought stuff to work and made us tacos ,he proclaimed they were "real" tacos. They were delicious. I just took his word that he was making us some real tacos.

Bros, I'm something of a taco expert. I have probably eaten more tacos in my life than I have drunk glasses of water. (Wait; actually, I'm sure of that. 😆) 

Now, I haven't eaten tacos at every conceivable taco shop, truck, restaurant or Mexican-family household, but I've seen my fair share of all those. However, as of right now, the absolute best tacos I've ever had come from Tacos El Gordo, and it's not even close. Those guys have a booming business in Tijuana and elsewhere and recently started opening places in San Diego and Las Vegas. They broil their meats over a charcoal flame grill and have all the usual stuff, plus some really tasty hot sauce. Holy shit, I think I'm in love.

I love me some carne asada street tacos.

When I was lucky enough to get married at the age of almost-40, the first decision we made was "Florida". The second decision was "tacos".

I was very particular on how they should be prepared. Legit salsa, flank steak, cilantro, pico, and radish. Queso cotija and queso fresco. The salsa was most important. I'm talking about the red sauce you get at a taco shop. I spent a year trying to perfect the recipe at home, but something was missing. I contacted one of the the better hole-in-the-wall taco shops here, and asked for the recipe. Abuela sent me texts with pictures of the ingredients and ratios. I learned the flavor I was missing was Knorr Caldo de Pollo (mexican chicken bouillon). Arbol chilies, roasted and rehydrated, and go from there for those wondering.

We had a chicken taco alternative, but I judged anyone over 8 years old who preferred the chicken tacos over carne asada. Those people won't be invited to my next wedding...

My favorite picture from the wedding shows my true love for tacos...I mean, my wife.

As a proud  Cajun from da bayou in Louisiana we are pretty good at reverse engineering other cultures tasty culinary dishes "our way".

 

Having said  that the couple of years when I lived in San Diego and San Luis Obispo area were filled with outstanding fish taco memories i will never forget.

last Saturday my wife went into a Mexican restaurant in Charlotte with her knitting friends. They had noticed that the local hispanic community was going there and she brought me the leftovers of a dish with cheesy rice that she had all 3 meats chicken, beef and pork and while watching the 2nd motos OMG was it great and I was stuffed and it was only 1/2 of the serving size.

There is a Mexican food truck in Rock Hill that's been always packed with people ever since we moved here 17 years ago that we haven't tried yet. There is another restaurant we go to and they make the guacamole fresh at your table and its always great.

I stopped at a place in Texas and in SoCal that were nothing like I had ever eaten before in the east so when going West its a must eat Mexican food along the way.
