I'm sitting out front of our local Fish n Chip shop after placing my order.Asian now, not Greek owners, I asked for a pickled onion, and...

I'm sitting out front of our local Fish n Chip shop after placing my order.

Asian now, not Greek owners, I asked for a pickled onion, and was greeted with blank stare, they had no idea what I was talking about.

Now my night is ruined.

Every December I sit and bottle onions...pickled onions are fricken awesome. Some folk dont know what they are missing.

So what kind of fish do you aussies use for fish n chips? 

Cod and flake are standard. 
Then snapper and whiting. 
If ya feeling fancy, then drop some coin on reef fish. 
We have awesome seafood here

For those who don't know what 'Flake' is - it's Shark.

Generally Gummy Shark, but, it can be anything.

It came into  commercial use, generations ago, through it being so much of the Bi-Catch, so often. Though, Humanity has always eaten the 'Bities'.

We certainly have awesome seafood here, that's for sure. Though, the big international trawlers / factory ships, are really putting a strain on things.

I'll have to check it out to check authenticity etc, but when you get a good one they're pretty damn good. Very regional in the UK though and pretty much a South Wales thing these days!

Edit: Sweet lord of all that's good and holy WTF is that recipe? Vegetables in a rissole?? Good god no. Corned beef mun, the Welsh way. None of that healthy stuff!

Not gonna lie, though, after watching Andy's video of the Aussie version and hearing your description of the UK version, I’d tear either one up.

Other then the size of the fillets i dont think I could tell the difference between perch and walleye once its breaded and fried.

We're pretty lucky in this corner of NYS ,we really dont have to look very far to get into perch or walleye. My father in law will occasionally do a fish fry with small mouth Bass. He trims the belly fat off and removes the blood line ,its really not a bad option. Nothing like perch or walleye though.

Didn’t know they had cod in OZ. Cod is the best for it. Some places will try to do it with other white fish, usually perch. It can work, but if it’s not just right then it ends up tasting like cafeteria fish sticks. Can’t go wrong with cold water cod.

Didn’t know they had cod in OZ. Cod is the best for it. Some places will try to do it with other white fish, usually perch. It can work, but if it’s not just right then it ends up tasting like cafeteria fish sticks. Can’t go wrong with cold water cod. 

I actually prefer cod over halibut. I’ve tried both at different places thinking perhaps it’s the batter and, every time… Cod wins.

Red snapper and sliced potatoes leaving the skin on for fries

Pickled onions are very good to eat ,but finicky to make.

It is an acquired taste but How about pickled walnuts. Before the shell is formed they are picked.

Wear rubber gloves and using a fork you stick the shell so that the shell can be soaked with the brine.

If you don’t use rubber gloves your hands will be dirty black for months and sort,of sticky

I feel the same about polk salad and turnip greens.

At least okra can be fried....
