Looks good! I wish you could come cook over here for a few months. I need more healthy meals!!

I’ve been working out quite a bit but my portion size and probably a few of my meals need to be healthier. I haven’t lost as much weight as I want to. I’m sure it’s all do to portions. And I like a root beer float before bed!!

We’re lucky that we have access to some of the highest quality salmon anywhere in the world, so I prefer simple preps to let it shine. This was just kosher salt, black pepper, and a lemon pepper blend I make, then rubbed with oil

Try brats on it. You’ll never want them grilled again.

Salmon taco night. Citrus cilantro slaw, baja sauce and some minced fresh habanero on a low carb tortilla. Dieting sucks, I could eat about 6 more. So. Damn. Good.

Awesome meals you guys. Makes me hungry every time i click. Everyone that mentioned catfish had me craving some. My wife and I decided to go for it at 10:30 last night using pancake batter. Didn't realize it was so late when we started but it was awesome. Late nite snack. Lol The left overs are going to be a great lunch with some potatoes, corn and some shrimp. Speaking of that. Obviously I use kraft Italian dressing on many things besides salad. I marinate all meats in it etc. Throwing a foil wrapped potato filled with italian dressing on the grill for 1 hour is a regular easy snack here. I do it often when guests or family are hanging out too and it smells amazing. Usually we open the potato and pour the caramelized Italian back into it or dip my steak, chicken etc into the leftover carmalized italian in the foil and its so good. My new thing is to take the potato out and wrap our corn on the cob off the grill in the potato foil while plating and it is a new delicious flavor twist. Been doing some simple stuffed shrooms with feta, cream cheese and topped with random other cheeses.

Got to smoking some salmon today. Turned out really good! Basted with maple syrup for a subtle sweetness to balance the salt of the brine

Isn't that what you feed dogs in AK?Silly That is a thing of beauty. Your smoke job looked like perfection as well. Color me jealous.

I've been thinking about getting a pellet grill. When my old home built stick smoker finally gave up after more than 30 years...I went for cheap/conveinence. Bought a charcoal/gas unit. It just doesn't cut it and clean up is a pain. Does your unit seem like it's gonna be user friendly? Without all the flame rails and such under the grill racks it probably doesn't need much attention.
