And how do you come up with "double the cost" and then mention the "7K range?" By my math, the FE would have to go for $14,000 to be double. And it isn't close to that. You'd save about 32% if you found a bike for $7,000 over the cost of an FE and that assumes you paid full price for the FE. There's taxes and such, but you'll be paying that either way.
If you're going to make generalizations, at least try to make them close to accurate.

I'd take the leftover and use the remaining $$$ to go racing for a year.
I also have a Ford Raptor. Every dealer that told me there was a "market adjustment" and wanted more than MSRP I simply walked out of. I finally found one and bought my truck between invoice and MSRP. Those who paid more for their trucks are simply not good negotiators.
So yes, $14,000-15,000 is double (or more) than a $7,000 leftover. But a left over has already depreciated and you have a savings for that since it is a leftover. If the difference is "worth it" or not? That's something only the buyer can decide. Obviously someone felt it was worth paying more than MSRP for and got what he wanted.
The way this place concerns itself with the way others spend their money is simply astounding. Who cares? Most of us here don't know the financial situation of those who are posting. I'm sure we have people with little to no net worth, and people in excess of seven figures. Your own situation will shape how you value things. I prefer to think of it as I've worked my ass off since I've been able to get a job as a teenager to be able to have the security I currently enjoy. What good is working my ass off if I can't enjoy some of the fruits of my labor on things that make me happy? I'm not the only one with that viewpoint.

And as for selling a "gently used vet bike," you can find a buyer when they know what they're getting. You'll lose money, but that's true of any purchase of a vehicle. It's a cost of doing business.

What i will say , is that back in the day , when we had a new bike every year without fail, i pretty much had the bike sold before i bought it , guys who wanted a good used bike knew mine were always spot on, and at the end of the season i would move it on for a good price because the guy knew what he was getting.

I'm at a point in my life there are only two things really matter when I ride my two wheels: Suspension and fitness. What it takes in money to achieve these two is of no consequence (ok some)
With excellent suspension and a fit and healthy body there is no stopping you
