My son is in command on this one: poblano pepper, onion, lime, pepper and salt. The other half of the onion will go on the Weber kettle grill with the fajita.

Omaha sirloins (thanks Pops!) and stuffed mushrooms. Stuffed with ricotta, italian cheese, garlic, spices, european bacon, parmesan and red onion. Gotta work with what ya got! Came out pretty damn good. Would definitely make again.

I cut a chicken spatchcock style with apple wood.
My buddy brines his but that seems too much salt for me.

Need to find a better way to marinate/prepare the chicken but I do like the new cutting technique.



Spatchcocked chicken is my go to when making whole chicken.
Piri Piri chicken is awesome if you like some heat.
Try this recipe, the marinade is worth the prep time.

My wife got a dehydrator for her birthday. The first thing she tried making was beef jerky, and it came out pretty darn awesome. It's already 100x better than what you can buy at the regular store, but with a little tweaking it can be "beef jerky store" quality.

Yes it's still the Holiday season in AZ....🤪
You know I love Turkey so we grabbed some from the freezer and had a tasty dinner and checked out the new Racer X that FINALLY arrived with the new awesome Calendar.


Think I'm gonna grab one from the store and do another bird in a few weeks. Tongue

And yes we like the tree and the ambience it provides so she stays up awhile....Smile

Man, I really miss them RacerX mags, hard to come by here and when one does find one in the shelves we get shafted with the price.

Back to the grub, Im gonna be doing Texan steak and steamed veg later on.

Been working on this a while trying different things. Pretty happy how it is now, will put most chain restaurant steaks to shame. This was NY strip, I think ribeye is better.

Sweet Onions coated in olive oil and brown sugar then grilled on foil.
Steak seasoned with my mix. seasoning salt, garlic salt, pepper, and brown sugar. Grill mark both sides until about rare then placed on foil with onions, fresh garlic and butter. Cooked up to medium in its own juices.
