Culinary Knives Suggestions

While watching TV the other day the wife mentioned how nice it would be to cook with nice, sharp knives. I then figured it would be a nice xmas for her. Any suggestions on brands, experiences, budget friendly knife sets?

I bought an moderately expensive set of J.A. Henckel's long before I was married.  We're still using them.   I take them to be professionally sharpened once in a while (even though I maintain them) and the guy who does it told me they are excellent quality knives.    There are different levels of quality for J.A. Henckels. 

Wusthof is another great brand.  We also have one of those (a specialty knife)

You don't need "Chef" expensive knives.    Even expensive knives go dull when not taken care of.   Key is buying good quality and taking care of them.

Depends on your budget. Spyderco makes a nice culinary line as does Montana Knife Company. Check out their lineups on each one of their sites. I was just on Montanas last night. Not exactly budget friendly but, Montana has a generational warranty. 

I have a few from each of them along with, a couple Wüsthofs. The Spyderco knives need to be sharpened regularly yet, can be honed to a razors edge fairly quickly. 

My favorite knife is my filet knife from, Knives of Alaska. I use it more than any other knife throughout the year. Holds an edge quite well. Even after cutting through chinook rib bones. I can manage about 16 chinook before it starts to lose its edge.

Not a knife brand, but a knife sharpener, and i haven’t used it, i’ve just heard great things about it. No wet stone or anything like that. The only sharpeners i’m used to are the store bought ones, i think i’ll buy this at some point though.

The biggest problem with Montana Knives is that, since they're hand made, they can only make so many of them at one time, so they sell out within minutes of being released.  Same with Half Face Blades out of San Diego. They're absolutely gorgeous knives, though.

Yup. I’m waiting to be notified when this knife becomes available. I’ve carried SOG Seal Pups for years on my backpack shoulder strap for fishing. Finally decided to upgrade a bit.

I bought this ol chap from a fish n tackle shop near Mozambique 32 yrs ago. I use it for everything and sharpen it myself using a piece of Japanese whetstone.

There are a variety of knives in my kitchen but this one is my favorite.

My wife only uses Cutco.  She has a LOT of that stuff.

I have Wusthof and Victorinox. I bought the Victorinox first and then bought a set of Wusthof later thinking they would be an upgrade. The Wusthofs  are good but I think the Victorinox is actually better and if I remember right they were half the price.

I have a few fancy German knifes my dad gave me but they're not any better than the Old Hickory knifes that came with my place when I bought it. 

I use the old guys cast iron skillets and knifes almost everyday

I used to buy top shelf cutlery but since there is literal sea water coming from my facets with the highest salinity in my zip code I don't anymore. I'm a huge knife nerd though.

MAC, Misono, Global, Wusthof, Henckel/Zwilling, Mercer, etc. Mercer make good budget knives. Any of the mid quality and up lines can last you a lifetime if you take care of them. Those are more mainstream brands. Any Henckels Classic line will do the trick and outlive you. 
I prefer MAC and Wusthof for pro use or for home cooks into good kit. I also have a lot of Globals but they were always free from doing events, I prefer MAC. 
Buy a triple sided rotating stone(8 inch or larger is better) and a good honing steel, can be diamond, ceramic or steel.

They are pretty but the white will look like crap unless you are fanatical about cleaning them.

We bought a lot of double headed Henckels about 20 years ago. They are great and holding up well to yearly sharpening. 

Keeping your knives sharp is way more important than most people realize.

A good chefs knife and a good utility knife will do 98% of all kitchen tasks. I like Henkel personally but that’s just a personal preference. You don’t need to spend $150 to get a good quality knife, you can get decent stuff from $50-$100.

Buy a honing steel and try to use it before using the knife every time. This preserves the edge and is the best way to keep the blade sharp between sharpenings. Having a good quality knife without a honing steel is a waste.

Personally, I don’t think most people need Japanese style blades as they require a lot more care to keep them in good condition and most people aren’t slicing raw fish or vegetables for Japanese dishes/sushi, which is what they’re designed for. Western style blades are designed to be used in Western style kitchens and you don’t need to baby them nearly as much

No doubt she might. They are just hard to keep clean. The handles will start to accumulate small little micro cuts and abrasions from normal use and that will hold dirt and oils.

Funny -- I bought our set from my Cousins boy that was doing the same thing .  They had always been  loyal to me as far as buying all their vehicles  , so I pretty much was obligated to buy a set, lol.   I didn't realize at the time that I was going down for  $800+ 😂. But over 30 years later ,we still use them daily 

** Out of curiosity I had to check current prices of the set I bought in '91.  That set now costs  $ 2,082.   Still worth it if they're the same quality as they were
