PC always ran NGK while the bikes were plastered with Splitfire logos. 

My shock isn’t actually a factory Redbull shock, I just cut the can and glued it around the bladder.

I heard that at least one team in the two-stroke days ran Yamalube in their sponsor’s bottles. Not sure if true or not.

Several top riders in the 90s wore gloves with their gear sponsor’s logo (or no logo), made by another brand.

On the US road racing side, Team Honda’s RVT1000R’s (RC51’s) were running another brand’s exhaust with the big “Jardine” stickers on them. I believe Akrapovic was the actual manufacturer, not certain though. 

I laugh every time the “plug of the day” comes along, with some wacky new ground strap. 

AC running Fox(?) goggles...  I can't remember who his sponsor was at the time, but it didn't start with an S

A few riders have ran Scotts during a major mud race when they aren't sponsored by Scott, ha.

Trey Canard raced two nationals during his HRC days on KYB suspension with no stickers, when the team was full Showa. On week three they finally started running the stickers.

There have been some other minor suspension ones over the years. Like Cooper Webb running Factory Connection tuned suspension last year at Red Bull KTM without the stickers. Justin Barcia right now is likely on suspension that has outside assistance...

Handlebar thing has been common over the years. Running a smaller brands bar pad over a main brand bar like Pro Taper or Renthal.

Tomac running Renthal grips at Star instead of Pro Taper.

Race fuel...last couple seasons I've seen a top 250 team sponsored by VP with ETS fuel on the truck, but only in outdoors. Supercross they actually run VP.

Not really a cover up but noticed Jett wears Mobius knee braces, most gear companies don't make knee braces so they don't care but Alpinestars makes braces.

Yes. Honda had the logos on the tires ground down and had a Dunlop tire sticker on the tires, but it was painfully obvious from the tread pattern that it was a Bridgestone. Suzuki also switched to Bridgestone for Ricky, but did so officially. 

100% all riders will never be drinking that shit....  Look at the cans, always, when they're drinking, the contents is replaced, or, they're drinking 'tour water' or equivalent.   No athlete touches the shit.   (Google 'Tour Water', learn about it, it's for athletes, as they won't touch toxic shit)
