There’s also a Filipino and Chinese chef that I follow that I cannot remember for the life of me (which reminds me: I really need to invest in a gas burner so I can get my wok on).

Yeti, you can cook with a real wok (a round bottomed one) over lump charcoal and achieve the same kind of heat that you would get with a real wok burner.

I went down the same rabbit hole about 5 years ago and came to the conclusion that adapting what I already had was a better solution than building an entire wok burner set up. I use my Weber kettle, with two full chimneys of lump charcoal and the Weber hinged grate with the removable center piece for a wok. This lets you set the wok right on top of the lump charcoal for extreme heat. I don’t use that word lightly. I wear a welding glove on one hand when doing this.

We ate good while we were out of town. Room service 5 times, our favorite Sushi place in the lobby of the Amelia Island Ritz and of coarse some good Texas BBQ at Sideways in Rockwall. But when i was on the way home i was craving my staple and had Publix delivery waiting when we pulled in.
I forgot potatoes so we made loaded potatoes today for lunch.

I haven’t had a dinner party in a very long time but I had some coworkers over tonight and wanted to do something a little different. Decided to make 3 Lebanese dishes

I made kousa, stuffed squash cooked in a tomato broth. Also made a quinoa tabouleh and a fatoush salad. Only got pictures of the kousa though

Even with Sweet Jan going through chemo this week, Sad I came home from work to chicken fajitas. They were very tasty.




She's a gem and it's sad for me to see, but she's strong and makes me so proud....

My Dad and I use to have homemade Menudo that he would pickup on Sunday mornings after delivering the LA Times.

Since moving to Arizona 34 years ago I had no family here and had to rely on the can menudo from the store.
I would doctor it up with onions and cilantro and oregeno and it wasn't to bad.

Well A few years ago my cousin's son Paul moved to Scottsdale and he loves to cook and he sent me home last weekend with some homemade Menudo--perfect for Wild Card Sunday. Smile

Thanks G. Just easy in the oven with a little cayenne pepper and some Janes crazy mixed up salt. Cook around 20 minutes, then add franks hot sauce and rotate regularly until done.
