Sometimes when I watch videos like this, I have the ability to put myself in their boots and I get a shot of adrenaline and my heart skips a beat! I think my feet are starting to hurt!!

Never would've happened on an electric bike.
Electric motors can and do lock up sometimes. You can also blow the drive electronics or fail battery/wiring and it can fail on an impact like a jump face or whoops.

I know in my RC cars you cannot panic rev a brushless motor. I don’t know if the bikes are that way or not.

Unlike you I have driven Rc cars in a race enough to know what they do on a jump. Unless the tech is different in the bike it may have the same problem. Since you don’t know about race level Rc brushless motors (nothing Traxxas sells is for serious racers) I can assume you know the same amount about electric race bike motors.

Electric Motor inertia on an Rc car is definitely a factor but not as much as the wheels. Nitro engine inertia is not very noticeable but again the wheels are. bottom line is you can pitch the car both ways in the air with brushed motors and nitro engines but brushless apparently have some safety rev limiter in them.

Yes you can panic rev brushless motors. Some cheap RC speed controllers have lag but you can do it anyway.
Electric motors hardly ever lock up. Bearing can give up of course.
