Hanging in there. I had pneumonia and partially collapsed lung. Been a bit of a roller coaster but I feel pretty good now. Still fatigued a bit.

Seeing all the positive vibes and folks asking about me has made my week!! Truly appreciated!

Geezuz.....I'm in bed but seeing that has me craving. I'm about to head down to the kitchen where I have some left over lamb chops.

^^^ That all looks better than the Christmas Star I couldn't see tonight due to rain/snow cloud cover here.

You dunk those quesadillas in that stew? I would!

Not really sure what we are doing this year. Trying to keep it a little more simple this year I think.
I normally smoke a turkey or brisket but we’re keeping it simple this year with chili, clam chowder and Kings Hawaiian ham n cheese sliders. Of course there will be a veggie tray and charcuterie board for pre/post dinner snackers along with an open bar.

For sure you gotta dip those in there!! Normally we just use tortillas but on occasion we kick it up a notch and make a full quesadilla to dip in the green chili!! Hatch green chili is one of my favorite things.

Basically just an extra cakey brownie, chocolate toffee sauce, some thickened cream to break up richness.

We have had some beef wraps, steak wraps, chicken wraps, veggie wraps and crispy enchiladas lately. Had a rare visit from MisKit Hemingway who loves tacos.
I am craving cheeseburgers at the moment for some reason though, oh and cake too now.

Sounds better than mine! The chocolate cake I made was pretty basic except for being scratch made from the ground up

Tonight’s dinner was great! Although I technically only reheated the shrimp from a sprouts one pan meal, I still really enjoyed eating this. Hey, I mean, I turned the oven on and made the rice if that counts?!?!! Lol

.....And I ate the whole thing myself Grinning
