Not sure if joking, but probably the guy with the broadest resume of anybody listed.

AMA flat track champion, mx and observed trials professional, Daytona 200 road race winner, and ISDE medalist.

Lots of great answer. I always thought Cal Rayburn or Mike Hailwood were. (I was very young, and magazines were da 💥).

I’ve changed my vote from VR46. Oh yeah, Marquez, eat shit💩😁

Ultimate has to mean versatile.
Only one rider who can excel at freestyle, MX, SX, Erzberg, probably doesn’t suck on a trials bike and I’m sure could ride a bike on a race track pretty fast.
