Lately I've dropped milk in exchange for almond milk and have been wanting to find good ways to get rid of dairy all-together, just to try it.

Next month August 21st will be my 38th anniversary of no meat chicken pork. Still am eating fish but I don't know for how much longer given the state of our oceans. I gave meat up after reading most of the long distance runners didn't eat meat plus the Swedes did studies showing meat breaks down something in the blood that is directly related to stamina.
I read that stuff and said SOLD!
BTW here in the US the biggest thing I notice is most people over eat. Their stomachs are used to being filled up so they need more food to feel "full." The less you eat the less you will have to eat (within reason of course) to feel full going forward.
KGAspeed-My best friend got me to stop drinking cows milk so now I drink the Vanilla Rice drink. Stuff is expensive but I am not putting in any hormones into my system either like you do when you drink cows milk. I will still drink it (when I am at my mom's in Dayton) but no longer buy cow's milk. Use very little butter on toast but am not afraid to use butter on certain things.
Shoot no one lives forever. All things in moderation...use and not abuse works for me.

I have come to realize what a very old man (90s) who was in excellent health told me a long time ago "Common Sense and Moderation" are the keys. As long as you eat and drink sensible your going to moto just fine. Being mental about a strict diet and a bunch of special foods isn't going to make a noticeable difference in the way you preform and feel.
Just do a Google Search for key words like: endurance diets, athletic diets or best foods for athletes. You could be reading and watching You Tube Vids for weeks and become more and more confused. This is one of the most controversial subjects on the planet. Then factor in the fact that everyone is a little different. One diet may work wonders for one person and not do didily for another...you know what I mean.
I'm not saying to eat processed foods, a lot of high glycemic index foods and crap like that. If you're being balanced with fruits and veggies, good quality meats (some red but more chicken and fish), quality fats and oils, nuts, seeds Quinoa, Brown and Wild Rice, plenty of water and Remember the Rule of "COMMON SENSE AND MODERATION" the diet part will be pasted with flying colors. It's the other ingredients that make up the real differences. Commitment and Hard Work!
On a side note: it always blows me away to see these guys pull off the track, wipe the dirt from their faces, and immediately carry on a conversation...looking like they just walked up a flight of stairs not just finished a 35+ minute moto. Amazing! Sometimes after a 5 lap, 10-15 minute moto, I'm so gassed that I have trouble putting my bike on the stand and getting my gloves off!! Damn steaks, cheese burgers and combo burritos!!!

I find it hard to believe, Roczen has eliminated red meat completely from his diet.
Stay away from processed foods and your 90% there. The rest is basic portion size in relation of carbs - proteins and what time of day you eat them. Processed foods during a training camp would effect me for a few days. My body certainly knew the difference of eating good fresh food and crap.
When I trained hard for Muay Thai I would be eating 4200-5000 Kcal during the initial phase (4 weeks) of a 10 week training camp and I would still lose weight. I would slowly cut down to 2800 kcals about 14 days out and down to a strict 1800 kcals 1 week out when your focusing on cutting weight. Usually cut from 175 lbs to 155 lbs effortlessly.
I adopted a pretty much eat what you like attitude as if you crave bacon or a juicy steak I am sure my body is telling me I need whatever nutrients that is in those foods. But I would eat those foods early in the day and always before 5pm.
-I ran in the morning then ate a large 1200-1500kcal meal in the morning. 50% of those carbs and slow release ones at that. I would also get the not so good foods out of the way like some bacon or sausages, french toast or even chocolate etc.
-Mid morning snack of around 400kcals would be some fish and veg or cold cuts and salad.
-Weight train at lunchtime followed by a protein shake and a 400kcal carb meal .
-Mid afternoon snack. Usually some savoury or dairy food and nuts again around 400kcal
-Train after work for 30-45 mins intense circuits followed by a 15-25 minute jump rope (skip). Another largish meal of around 1000 kcals but this time no significant carbs. Maybe a very small baked potato or a very small cup of rice. Protein shake again as well.
-1 hours training in the evening focusing on pad work or sparring. Followed by another 400-600 kcal meal.
Now keeping that in mind it is not possible to maintain that all year round. One your body can't maintain that kind of peak and two the food bill would be ridiculous.
My maintenance routine would be base metabolic rate plus 800 kcals every day. I used to save a few hundred a day so that a few beers and a pizza on a Friday wouldn't be out of the question. I wasn't that particular about counting calories either. Once you got used to counting certain foods for a month you can easily judge whats on a plate without thinking.
To make sure I was full all the time my other tip was to eat a cereal bowl of vegetables with some olive oil drizzled over it once a day and the same with fruits once a day as a sweet snack.
It's not that hard to take the best riders and make them a little bit better.
And can you provide some studies for the coconut water info?
