A guy sitting in a chair staring at his helmet sounds like a guy concentrating to me.
In no way would I encourage or even let my kids do anything that I thought would screw up the guy's concentration. The stakes are just too high, I think.
Teach kids that an autograph is just a silly piece of paper and that might cure a lot of this hero worship disappointment.

Again, teach your kids to be courteous and respect the times when they are doing their jobs. If you do decide to teach them that a signature scratched on a sheet of paper is unbelievably valuable and that they have every right to demand one from a rider, at least have the courtesy of having them do so in the autograph lines.....
