I love steak but beef is ridiculously expensive here. Best kept secret in steaks if you want an excellent steak without breaking the bank: tri tip. It’s nicely marbled (as you can see below) with a great flavour while being way less than a strip loin or ribeye. Tri tip is usually cheaper than a top sirloin and I prefer it. It’s my go to cut - unless a high end cut is on a big discount - or if I want to really splurge and go to a small boutique butcher shop and get some cold smoked ribeyes. These are about to go on the BBQ (I mean grill)!

Our go to is tritip most of the time.

Cosco’s seem to be consistently better than any local butcher shop in the Fresno area.

Pick a weapon and grill smoke, Bbq or make a pizza on the gozney.

Reverse sear. Smoke until 110F, then open the sear plate on the Pit Boss until desired doneness.
