You might think I am crazy and/or don't have a good enough barbecue palate, but one of the places I liked to go for barbecue the most was a place called Bone Daddy's just off I-20 in Arlington.  I guess it used to be a small chain of 4-5 places but I think it is down to 1 (and that one might be closed by now) now that the Arlington location closed after they had a customer drive their car into their main electrical box and cause a fire.

Terry Black's was excellent, but I almost feel like they should have passed out a loan application at the front door so you could finance your meal....  $40 for a beef rib, minimum.  But their slaw was freaking excellent!

I took most of the people who came down to visit, either for work or personal visits, to Lockhart's.  Solid and consistent and always way above average.  We tried the one at Texas Live between the stadiums once, for lunch on a weekday, and it was not quite the same.  There was almost no one there and I think that the food was just a little bit 'dried out' compared to the one in Bishop Arts that seems to crank out about 50 pounds a minute!  Lockhart's was the first and last barbecue we had when we were living down there and when I see these rankings that come out and Lockhart's isn't on the list, I wonder what in the world must be better than that so consistently.  Maybe it's the ambiance?

Bone Daddy is solid, you ain't crazy.

There was once a place near Jerry World called Gaylen's. It got swept up in the stadium schlomozzle. Best fucking ribs in Texas, in my estimation.

I know. Just fuckin with SMF. I am going to grill them though. I like the skin charred a bit. Reminds me of my childhood.  Sometimes I just nuke em but for Memorial Day I want  to put in the extra time and effort. It gives me the opportunity to think about what the holiday is all about.

I always grill my hot dogs. I grill up a bunch and nuke the leftovers in the mico the next day. I put lots of sauce on um….. pretty tasty.

We're having a barbecue later ,stop by , we'll be cooking steaks on the grill. Thats how I typically hear the words used in the northeast.

It does tend to get overlooked by many with all the festivities going on.

I love steak but beef is ridiculously expensive here. Best kept secret in steaks if you want an excellent steak without breaking the bank: tri tip. It’s nicely marbled (as you can see below) with a great flavour while being way less than a strip loin or ribeye. Tri tip is usually cheaper than a top sirloin and I prefer it. It’s my go to cut - unless a high end cut is on a big discount - or if I want to really splurge and go to a small boutique butcher shop and get some cold smoked ribeyes. These are about to go on the BBQ (I mean grill)!

Agree on the tri-tip being an underrated cut. I get the tri-tip roasts from Costco and cut them into individual steaks, especially when I’m cooking for employees at work (up to 150-160 broken up into different shifts). 

For those large groups like that, I like to marinate them for about 48 hours in gallon ziplock bags piled in a cooler. I like the Sweet Baby Ray’s Honey Chipotle a lot but I’ve used this Japanese Barbecue sauce a couple of times with really good results.

I'm also a tri tip fan. Mostly because I'm cheap and won't pay $30/lb for NY strip. Not a big ribeye fan. Tri tip has tons of flavor and you can fuck with it any way you want cause it's cheap. Another thing that reminds me of my childhood is A1 steak sauce. On certain days, my parents would have steak. My mom had us convinced that ground beef was steak too. We doused that shit with A1 and never knew the diff. Tasted great to me. 

Tri tip and A1 is awesome. Or just tri tip. Or tri tip marinated in Italian dressing or the way APLMAN does it. It's no stress beef for us poor folk.
