Good fish recipes?

Let's hear 'em.

I decided to add a bunch of fish to my diet. My family hates it, so I'm gonna have to come up with some recipes that can be pre-prepped or made and eaten as leftovers. I've usually only done the typical stuff like broiling or baking with simple seaonings. A few times I've grilled the tougher fish like shark, and that was pretty good.

Oh, all water dwelling victims apply here...so mussels/crustaceans are included. About the only fish I don't like is catfish.

the important thing about fish is.....cook the fish simple but its all about what you have with the fish as sides.

Buy some Halibut, and marinade in Italian dressing for a couple of hours.. Man it is awesome! And I bet your family would like it also.

Tuna wraps, nothing fancy but a staple of my diet. Mix your tuna the way you like it. I prefer white albacore, a little mayo, some fresh green onion, relish, pepper to taste, maybe some chopped radish or even pepperocini chopped fine and a dash of terragon vinegar. I use flour tortillas and margarine. Place tortilla on a plate and toss it in the micro and nuke it for 20 -25 seconds, pull it out and slap a little marg on it, toss in a couple spoonfulls of the tuna mix wrap and eat while the tortillas still warm. Repeat like 3 or 4 times to satiate. Good source of protien. And a lot of fat Smile

When I start slaying calico bass in the summer I usually girll a few fillets shred up the meat and make enchiladas. Seared Ahi steaks with little soy n ginger is good too.

If you want to eat fish for health reasons, you don't want any cooking advice from a cajun! Speckled trout or redfish - deep fry those babies in as much grease as you can fit in the fryer, then smother them in any of the multitude of sauces that consist mostly of butter!

Try the cedar plank salmon at costco. very good and reasonable

Take a meaty fish, like red snapper. Coat lightly in olive oil, then dredge in Tony Chachere's Herb and Spices. On a scalding "Hot" pan blacken the fish for three to five minutes per side. Before serving give it a good squeeze of fresh lime juice over the top.

Dang, Mutt....that soungs great.

I'll try to get some of the Taiwan-style recipes and post 'em, after I cook 'em. The fish is amazing.
