As of this moment, it's all black...

Supposedly, they've had a bike and been riding it for over 2 years.  Cairoli and crew should bring it to full race level.  This is fun!

If they allowed cameras to shoot this, why isn't the official video out there/available.

Well after watching that video: 2-wheel motocross bike with black plastics.

As we've all been told by the smart people, both Ducati and Triumph are brilliant companies that have very keen market research people, professionals who have their "finger on the pulse" of this sport, and thus both companies knew we were all secretly aching for more black bikes. LOTS of them.

I suppose the only question left to answer is: will they be able to build them fast enough to meet this hidden pent-up demand?

Last question you had.. Ducati has no interest in mass production. They won’t keep up with demand.

Fair enough. And don't get me wrong, I think the Ducati will be full of cool ideas and innovative thinking and new gadgetry - I just wish it was oxblood red. The black bores the crap out of me.

This is true...  But nobody said it was anything more than that.

I wouldn't jump to conclusions on the color just yet. Black is a good color to use when the bike is still in development. Ducati is red through and through, just like Ferrari. I'd be very surprised if they don't end up being red, and if they're not, you'll be able to buy red aftermarket plastics which will look right at home on a Ducati.
