Roasted a pork loin tonight. If you guys have never had pork cooked to medium rare, you have to try it!


I've got one going on tomorrow. What temp did you pull it at?

I smoked my first whole brisket. Turned out amazing, forgot to take pics, just the left overs. Only 2 families and there wasn't much for left overs.

Smoked at 225 for 8hrs, wrapped in butcher paper, raised temp to 250 and cooked until 205 IT. Rested 4hrs wrapped in towels inside a cooler. Nailed it.

Wife’s allergic to shellfish so I made coconut chicken tenders instead of shrimp. Mango honey dipping sauce (lil
cilantro and sriracha mixed in) and steamed broccoli. The quietest my tables been in awhile!

4 1/2 hours of work. Turned two bushels into 38 quarts of tomatoes to get us through the winter.

Smoked salmon. Both chinook and coho. I went with this smoker over a Traeger due to the price point and, the amount of fish I can smoke at once. I didn’t put up much this time but, it turned out awesome.

Had a celebratory dinner tonight for my brother. NY strips, grilled artichoke, and not pictured is the scratch made Caesar salad with handmade mayonnaise. Ignore the sticker on the lemon 😂

Here’s a good brine for smoking salmon I’ve been using for about 25 years when I smoke salmon. It’s a wet brine. After you cut your pieces of fish up, place them in the brine and leave in the fridge overnight. Usually 8-10 hours. I place a dinner plate over the pieces of fish to help fully submerged them.
I also use a 50/50 mix of apple and cherry wood.

2- quarts water
16- oz apple juice
3/4 cup of white sugar
3/4 cup of brown sugar
1/3 cup of salt.

Give it a shot. Let me know what you guys think.

Looks pretty similar to the brine I use as well. Mine is simple so I can use the salmon in different preps without it being too strongly flavored.

I too do 50/50 apple and cherry. Alder is fine but fruitwood works best for high quality salmon

Yeah,I tried mesquite “ONCE” smoking salmon. It just wasn’t for me. Plum, apple, cherry, orange, lemon and, even peach works really well. I trimmed trees as a kid when I lived in California for pocket money. It’s a shame some of the citrus trees don’t grow in the PNW. But, there’s plenty of apple and plum trees here.

OMG that looks amazing, I LOVE smoked salmon. I've tried looking for it online and never had any luck. That sounds so dang good.

Just finished. Took 8 hours exactly at about 265ish. Smoked with applewood. Into the cooler it goes for 2 hours Laughing

Just a quick barbecue last evening.....rump steaks with a pepper sauce and piri pri chicken.....nothing special but was a fine treat.. .rough as it comes...
