If you're pumping coolant out your overflow, make sure your radiator cap is good, first. Oh, you can get stick on temp sensors that you can place on your bike in a variety of areas to determine temps (you'll have to take into account where those sensors are placed).
But, again, post the symptoms and your bike info.

Still running hot, look at how you are riding it? Are you lugging it over excessively?
Finally, who is says it is running hot? Sammy Spode or Steven Spokeless. Do you put faith in these guys? Blowing some fluids is normal. Dry radiator after a ride is not. How long are your motos? five laps or five hours?
50/50 is fine - if you are running 50% water, 50% Coolant. Cant go wrong running engine ice, or kawi stock fluid. they usually sell it premixed so check for that.
Did you get the valves checked when they did the head gasket? Did you have the head checked to make sure it isn't warped?
How did you check the head for warpage???
How did you pressure check the coolong system???
What gasket are you calling the head gasket?
You say that "YOU" checked to see if the valves were in spec, and you checked to see if the head was warped...yet you ran straight water in your radiator and you wonder if a clamp missing would cause your bike to over heat?
50% battery water and 50% glycolic coolant is ok.
