Agree, do two days if you can. MXON is fantastic, though I am not sure how the atmosphere at Assen will compare in person considering its at a road racing circuit? Regardless you will have a blast, Europe is a great experience. My two youngest boys and I are going to Ernee this Fall for MXON. Can't wait. Amsterdam-Assen-Amsterdam on a one day format with a train is not something i would recommend as a Dutchie. A train could be a pain in the ass sometimes in Holland, with not having allot of time to play around with i should take it a bit more easy and stay the whole weekend in Assen and visit both days the MXDN Event.
