I have a 2022 mc250f that I’m working on and it runs great when cold but after about a 20 min moto of hard riding it bogs and stalls out at idle, the rider was in Oklahoma training and blew it up down there, had a different mechanic rebuild it down there and after that has had issues, haven’t checked valves or really dug into it at all, but have a hard time believing he would shim them wrong

Your symptoms don't really point to valves, but if you're already working on it, it wouldn't hurt to check. Sounds like perhaps a fuel issue or electrical. I'd check the resistance in the ignition coil as well as test your fuel pump. You can also check fuel filters for giggles.
Is the bike hard to restart after it dies? Do you need to let it sit and cool off prior to restarting?
Valves checked out. Bike does start hard when it’s hot, starts easy when cooled off. Will kinda sputter when starting until you give it gas then it finally fires up but if you let off it dies again.
Sounds like a possible fuel pump or pressure regulator. I'd start there first.
