I have bought the new bike but can’t ride for a couple of weeks due to injury. I have ordered hand guards and a skid plate, what else do you recommend? Any previous/current owners please chime in.

I sold a 19 FE501 and 17 FC350, and currently have a 450sxf as well.

I was thinking about taking off the standard plastic and putting an aftermarket set on to keep the originals nice but not too fussed.

What are you planning to do with it? Ride it in the bush? If you ride in the mud or ride a lot, I would definitely save the plastic.

A lot of those bike only get ridden on dirt roads in the US (being street legal), but I know that's the only 'off-road' version of the MC350 in oz, right?

Yeah I'll get the plastic and a thermo fan as well, mostly riding single trail in the forest.

Great bikes! I've been thrilled with mine.
I didn't like the white/red OEM look, so I swapped the plastics to all red and saved the OEM stuff for resale.

I strictly ride mountain trails, so I did the following:
UHD tubes front & rear
skid plate
rad guards
rad fan
hand guards
rear rotor guard
swapped the low/flat handlebars
sparky
2 stroke filter cage/cut flap on airbox lid
13/51 gearing
4.8 rear spring
rekluse radius cx clutch

Also have a 300xc, but its been neglected since the 350 came home. These 350's are badass.

Did your bike come with air or spring forks?

I think Darren at TracRite has a good mid-valve upgrade to handle more rider weight and speed/jumps. If you're doing slower/technical riding at a trail pace, you might find the stock stuff is capable.
Suspension is probably your biggest thing after the basics of tubes, bars, grips and protection.

Very nice, I like the all red look too, that's what I have ordered for mine. Where did you get the shroud sticker?
