The Fox Factory offerings were way ahead of their time. I have the remote styles on my 79 CR250 and they used the shim stack theory back then. I did have to build some aluminum reservoirs for them but they work great, at least so far on the two tracks that I have used them on.
For your shock you want to run a modern piston design like a racetech piston. I just happened to have the kx piston from when I raced a klx450r and bought a cheap shock for valving shims. The cr ressy should work but you will need to get a custom hose to go from the shock to the ressy as I doubt the cr ressy will have the same threads as the Yamaha. Your local Parker fitting store should be able to help you.
I also have a spare 79 shock that the white brothers modified that I plan to rebuild and try or I may put another kyb piston in to help me tune the valving faster.

Hey I just bought a Fox airshock for YZ125/250/400F
Am hoping it could be made to work on a 250E, otherwise a frame
change to F will be in order. Got a great deal from a friend,
could not pass it up.
I also bought a White Bros modded stock '81 YZ250 shock off of eBay in late December.
Came with their dual spring set-up. That one's for my air cooled YZ175H project and
will get the RaceTech piston set-up for it as suggested above.
The fox ressy is just 8 bypass settings and a few shims covering lots of ports so I'm not sure what is in your kyb adjuster that we could compare the two over.
What piston do you plan to run?
For the reservoir I'd really like to go with the Fox. Should be here about Friday. Here's the picture of it.
