As of lately I have been just making up and cooking as I go along.

Been turning out pretty good but ready for some new ideas.

Drink about 1/4 - 1/3 of the beer before you do this or it will boil over like crazy.

Toaster Oven Chicken Bake

Take a chicken breast, bone in, skin on and add some salt and pepper to it.
Chuck it in the toaster oven on a small pan
Bake it for about 45 - 60 minutes @ 350˚ or until you see the skin start to brown and crisp up
Pull the pan out of the oven and pour some salsa over it. Just enough to cover it.
Now toss some cheddar cheese on that bad boy and chuck it back into the oven until it's all done and the cheese is melted.

Coq Au Vin

TECHNICALLY, you're supposed to cook with an older rooster (cock), but no one is going to hold that tight to the recipe.
It's basically slow roasting/poaching a whole chicken in herbs and red wine.

Best with dark meat cuts like legs/thighs

It is almost exactly the same as making Boeuf Bourguignon, but with chicken

Look it up, but in simple terms...

In large ceramic dutch oven

dredge and flour chicken
render down some bacon (for the fat) and then cook some garlic and onions in that fat, remove and set aside
Brown chicken in fat, set aside
drain fat
add two table spoons tomato paste, the garlic, onions, two stalks celery (quartered), two carrots (quartered) a large bundle of thyme (tied) and then chicken.
Pour over enough of a good red wine to just cover chicken and bake at 325 for about two hours
when at 2 hours, remove chicken and strain all else through strainer and into a sauce pan
put sauce pan on med heat and reduce down to thicken, a small amount of sifted flour is ok to move it along
pour over chicken and serve with side of your choice (but baked potato quarters is great)

Ive heard of this but never tried it,,

Both of them other recipes sound good,,

We have a toaster oven, that has a rotissorie included, and it works ok for chicken, but the mrs also uses Reynolds cooking bags(some kind of special plastic) for chicken and turkey, and it works really good for turkeys, they not only cook faster, but retain the moisture.

Use apple juice or cranberry juice instead of beer. Beer is for drinking, ya dummies.Tongue

Oh, I like to slice apples and put between the skin and meat. Good stuff!

Use pepsi or coke instead of beer and throw it in the smoker

I've been making this one for awhile.
Taste awesome great quick easy fix.

Throw the oven on at 375F
Take 4-6 Chicken breast or some good size Tenders (I use tenders, they seem to adsorb the flavor better)
Place in lightly greased glass baking pan
Take taco seasoning and season both sides on chicken
2 cans of chopped green peppers - spread evenly over chicken.
1 jar of Salsa (I use Hot cause I like the burn, Med works well too) pour over chicken evenly
Bake for 25-35 mins until juice runs clear
Then take out and spread some Monterrey Jack or pepper jack cheese
Place in for a few mins till cheese is melted.

Then for the side just make up some white rice.
Its fast, easy and packs a hell of a lot of flavor.
