The car was accelerating, bike was decelerating and he was clinging onto it. As soon as the bike hits the rear of the car, it assumes the same rate of speed, transfers a little bit of energy into the car and flings the guy into the air. Dude follows a parabolic arc through the air as the car speeds up... it's possible.

The trick is to imagine that the car and the viewer's car are both stationary. Could a guy on a sportbike endo into a parked car at about 20-25 MPH and flip onto the roof? Absolutely.
