Before anyone says it, yes, it's cheating...

Rub the ribs with your favorite spice rub
Let sit for at least an hour
Place slabs in smoker for about 1.5 hrs
Remove from smoker and immediately wrap each slab in heavy duty foil, two layers, sealing each layer individually.
Place on cookie sheet
Place in 250oF oven for about 3 - 4 hours
Remove slabs carefully from foil and place on cookie sheet, single layer
Baste with favorite BBQ sauce
Place back in oven for about 15 minutes

Enjoy

A lot of people use a wet mustard rub.
I do not like mustard, so my answer is "no"

That's cheating dave (I do the wrap and oven on butt too). I like mustard rub. It makes the rub stick. You just tast the vinigar in the mustard. Like bacon, vinigar is good on anything....anything. Makes Muskrat taste good....yummm

Yeah I would have to say they were probably the best ribs I have had texture wise but I would probably use a different rub and sauce next time. They were all gone pretty fast though lol .

I got the rub recipe off the food network it was Emerils " Rustic Rub" and I used a Honey BBQ sauce.

I guess thats the fun part about cooking , trying different combos until you hit the jackpot Smile

Yeah, mess around with different things.

Never discount simplicity....salt, pepper, garlic.

Just crush some garlic, hold in palm and rub the entire slab, then salt and pepper

There's a lot of flavor in the smoke itself as well as the sauce, some rubs can cloud up the flavors.

I have also had good luck mixing different sauces into one. Take a couple you like or even a few from the refrigerator, mix in a small pot and warm on the stove and allow to cool...the heat and cool allows the flavors to "marry." This way, no one flavor from any one sauce is more overpowering...makes each flavor more subtle

Bottomline, the main reason I love to cook is the experimentation, as well as the feeling of accomplishment when it turns out well.

Trust me, I have thrown away many meals because they just flat out sucked, it's rare, but happens.

Tonight I made a black bean soup, but the beans didn't soften in time, so we had wendy's...soup is in the fridge and we'll finish tomorrow and hopefully it'll be OK

All I use is salt, pepper and shake on brown sugar. Once on the pit, I put honey on several times. I never use any BBQ sauces or anything.

I like to cook them pretty close to the same as above. Except put them on the grill for the final 15 minutes. Low heat of course.
