I'm thinking of doing a Harley ride through TX and hitting Austin, Billy Bobs, Floore's, Big Bend, and ending in Corpus at Brewster Street. I figure i need 10days give or take?

Probably trailer it down and back.

Big Bend only in late fall or early winter. Brutal hot in summer.

A ride not to miss is the "Texas Three Sisters Ride." The best part is the loop that starts in Leakey Tx. and goes from there up along the Nueces river. From my house in N. San Antonio it is a 320 mile loop. I've done it about eight times on my Harley.
You should at least go to Leakey TX. there are 100s of bikes there on weekends. Also from Austin, Luckenbach isn't far off the path to Leakey.
If you visit the Alamo here in town, be sure to check out some of the other Missions.

"some of the other Missions"

The one that really pushed things over the edge was Presidio La Bahia. Some bad shit went down there, and IMHO that was more signifigant than the Alamo.

Growing up in Corpus we went there every year on school field trips.

If you go to Big Bend do the River Road ride. I wouldn't go in Summer either, there are 80 mile stretches with hardly a house.
