Panhandle area riding end of Dec.

I am heading down to the Destin area the end of December and would love to get a day of riding in. I mainly do woods riding in Indiana so would like to either hit up an MX track that isn't too advanced and/or some places with trails or loops so I can get some seat time in. I have never really gotten too advanced on an MX track...but in the winter, seat time is what matters to me. Appreciate any help on this.
