I am a Senior Expert Offroad racer & sometimes MX

Have a 16' 150sx ...comes with Steel head stays
later models are Aluminum & are fairly priced

Would I feel a difference ?

I am pretty sensitive ...lol

I tried the aluminum on my 2016 125 and I liked the steel more because I typically ride rougher tracks.

Aluminum might be better on soft sandy tracks or if you’re looking for more front end traction. Just a give and take.

Thanks for the quick answer

So... I ride mostly deep sand ( Michigan )

but also would like better front compliance on roots , logs crossings , trail junk that tends
to make your front end lose traction when turning

think Alum be better there ?

Is the Aluminum stiffer ?

Aluminum is stiffer so it could help in soft conditions but on small bumps, rocks and roots it will feel more harsh.

The only way of knowing is to try them back to back.

If they are inexpensive, why not buy them and give them a try.

Even better, have a friend come with you and randomly change them out and cover with duct tape so you dont know which ones you are running... this way, your brain might not trick you
