Hey I'm looking for a new set of radiators for my ktm exc 300cc enduro 2006 bike but I don't know if I should go for oversized or normal radiators this bike has been converted in to a supermoto so for on road use

Stock or oversized, I wouldn't worry too much about the capacity. If you have overheating problems, causing steam, get a higher pressure rad cap.
If you still have problems, hookup a coolant overflow bottle. Not hard to plumb in place. Most of the street-legal bikes use this type of setup.

If you go with a bottle around the front of the steering head (like in the first link), just be sure to check for clearance from your headlight.
You can make almost any plastic container into an overflow bottle ... post back if you have any more questions.

Unfortunately I don't have any experience with a 300EXC motard, to know for sure. I would just take it for a run and see how it goes.
I'd think your biggest concern is getting the jetting rich enough so that it's sufficiently lubricated, but not blubbering in traffic. Fuel supply is actually one of the main ways a 2-stroke is cooled, and not enough fuel can lead to overheating and seizing, most likely at half to wide open throttle.
Other non-mx forums (like thumpertalk) or a local ktm shop might have more specifics for you.
