I'm possibly thinking of riding again after an 8 year break.
The bike has been in an unheated garage - so which parts in particular will need replacing (aside from the obvious, air filter, gearbox oil, radiator fluid). I assume the tyres and tubes won't be any good?
I am just concerned some of the engine seals may have perished in that time. Or maybe the piston ring could have developed some rust in the cylinder.
Thanks in advance.

It's the hidden things like the engine seals that will be playing on my mind.
After all fluids are changed (don't forget brake fluid!), get a buddy to help you lay it side to side, front to back, hell upside down if you can!
This will disperse the fluids throughout their given cavities and hit all seals, etc. Fresh fuel, petcock open, throttle WFO and gentle kicks with spark plug wire disconnected.
Do this a few times over the course of a week then give it a go! If it fires up, warm up gently/cool a few times, then a light ride or two. Change fluids again.
What bike is it?
I'm not a fan of starting my bike at home, simply because you don't know who's around. Unfortunately there are some undesirables/inbred/scum around.

Anyhoo, do the fluid changes/gyrations, load her up and go to your "Safe Place". Do a bit of warm up/light riding, and head home to do all the fluids again. Seems reasonable.
