Venison ,pan fried with butter . It makes a horrible mess . Leave the knives in the drawer, you can cut these with a fork.

I have some pork tenderloins that I do with the sous vide. They're over an inch thick. I bag and freeze when I buy them. To cook I open the bag and pour in some Italian dressing. Push the air out and toss it in at about 145f for a couple of hours. Sear on the bbq and go at it. It works really well for thick steaks too. I don't bother with it for thinner ones.

I see cast iron and a big gas cook top. What are we cooking with there? Gas or electric on the griddle? Electric griddle on mine.

All gas , i had some italian sausage going in the cast iron . I'm too much of a chump to cook venison in anything other then nonstick .
