If you don't mind me asking...what is this? It looks good.
Theres some salmon under there with a mango fresh ginger cilantro garlic salsa on top and a side of squash onions mushrooms and bean sprouts sautéed in some sesame oil with sesame seeds and a lil dash of soy sauce.

Pull it off then cook in a crockpot on high for 3-4 hours. I put in a little bit of apple juice and more seasoning in the crockpot. Some times I’ll use the oven. But lately I prefer finishing in the crockpot so I don’t have to run the oven for hours and hours.

Yeah. I wrap the pan in foil and let it cook like that in the oven. Used a brown sugar base rub with hickory chips for smoking. I use a horizontal smoker with charcoal and add hickory chips and charcoal about every 30 min. Used to dump a bunch of charcoal every hour to hour and a half but the temp was just too difficult to maintain doing that so I add less charcoal more frequently.

I like to wrap my pork in Banana leaves, Yucatan style. I've also done burlap soaked in Bourbon.

Are those the Jack Daniels ones you can buy at the store? If so, I've never tried them

No. I just added sauce on them before cutting them this time. They don’t need any sauce but I like to try different things. So I sauced them this time! They were great!

Totally up to you. My friend owns one and he is very happy with it. I do not own one and never will, or any other kind of pellet grill/smoker. That is just my preference

They are fine. Just sorta depends on your needs, experience, hobby, etc.

Are you a set it and forget it type, or do you like to tend to your cookouts and have a few beers? Are you looking for a smoker and grill in one. If so the Traegers are good. And you can set it and forget it when smoking.

I’ve got an offset stick burner which requires a lot of tending too. I’ve also got an electric smoker from Samsclub that only requires adding wood chips to it once or twice an hour.

I like tending and managing my cooks. I think that’s part of the fun. So I don’t really want the set and forget type smokers. I kinda enjoy experimenting and trying different settings and cook times, etc.

I have one. I know people have their own personal experiences and opinions, but my traeger has been really solid for me. No, I can not sear a steak on it. Everything else has been so easy it’s laughable. That’s coming from a guy who started out with a barrel smoker, then two different vertical propane smokers, then my traeger. I do not miss the 30 min Temp checks on super long cooks. Now, I just set my temp alarm or cook time alarm which is also connected to an app on my phone. Done! Comes out perfect every time!

I've got a pit dug in the ground, firebox on one side, smoke box on the other. I've got a pellet smoker and a grill, but when It comes to BBQ, nothing replaces the pit. Yeah, it's a pain in the butt, for temp checks and adjust the fire and coals, the finished product is just better. It's like mass production vs. hand built to me.
