Pouring down rain and no charcoal fluid? no problem. Just cut a 4 inch long 1 inch wide piece of cloth from a t-shirt or even tough paper towels and soak it in olive oil and lay horizontal in center of coal pile with just a little bit sticking out of the side like a candle wick. Light the wick and we have fire baby.

My wife made these in her new Electric smoker. Probably the best smoked chicken I’ve ever had. No joke. And I’ve made smoked chicken hundreds of times. This tops them all.

She smoked them for about 2.5 hours at 265 degrees with a 80/20 hickory/apple split.

I rubbed them with butter and we finished in the oven at 325 for about 30-45 minutes.

I dipped my potato skins in the juice that was at the bottom of the pan. So damn good!! These chickens were so juicy and Smokey. Literally her second time using her new electric smoker and she cranking stuff out like this! Amazing!

Yep, Costco crab. I bought a case for Christmas and we couldn't finish it, this is the last of it.

I will say that every meal I have posted is 100 percent gluten free. But no one would ever know if I didn't tell you. I have a lame food allergy but I eat a lot of good home cooked food and have not had fast food in over a decade. Bread was always the big issue but now I would choose my gluten free bread over any its so delicious. Really a bummer finding that out as an adult who loves all foods but its pretty easy to deal with now.

Great smoke ring. Do you put your ribs on the grill/smoker straight out of the fridge?
