Have you ever went over a friends house to eat
And the food just ain't no good?
I mean the macaroni's soggy, the peas are mushed
And the chicken tastes like wood
So you try to play it off like you think you can
By saying that you're full
And then your friend says, "mama, he's just being polite

Yes....all of this. My friend is married to the worst cook to ever be placed in a kitchen. That woman could burn water if it were possible..... The last meal I choked down over there was chicken fried steak as she called it, but it was hardly like any I had ever eaten. The breading was nothing more than a brown, grease based marsh that amazingly clung together around the so called meat somehow. The "meat" was some thin oval shaped disc I swear was produced by Maxxis, or possibly Dunlop. The gravy was better suited for use in drywall work, and one scoop of it added 3 pounds to the entire plate. Her mashed potatoes were something I couldn't figure out, as they were damn near soup like, but had what seemed like raw chunks of potato mixed within. You know something has gone wrong when the gravy is far thicker than the potatoes buried underneath..... And lastly, I have never seen orange corn. Not yellow, but cooked corn that was orange, as in KTM orange. She said she had been making it that way for years, and I didn't have the balls to ask her as to how she could alter a food item in such a way. I, being polite, put forth an effort to eat this meal with a smile, but just could not complete the mission. I headed home and found my new best friend (the toilet), as we began a close 3 day friendship, rarely being apart for no more than a hour at a time. After I healed up from the torture I had just put my entire plumbing works through, it suddenly hit me....... No wonder everyone in their house is thin.

Basically a reuben sandwich. My wife used some turkey pastrami, smoked turkey, swiss cheese, sauerkraut, on sourdough bread. Usually I would have used rye bread but that was all we had. The sauce is thousand island dressing. It was awesome!!! I loved a good sandwich!

Is that a pork roast?? If so, I didn't see much in the way of liquid in pan before cooking.....just rely on the fat drippings for moisture? Cook temp, time? Looks fantastic, please advise if you don't mind giving me the rundown. Off all week, so I wanna make this ensemble for dinner during bowl games. Really looks great!

That was a bone-in prime rib. I transferred some of the liquid over to the carrots and mushroom pan part way through. I think the potatoes absorbed some of it as well. It turned out wonderful. It was as soft as butter cutting into it. I would have liked the fat to render down just a bit more but it was still very juicy. We love it with a little bit of horseradish sauce on the side. The rub is a prime rib rub from Sams Club or Costco. I don't remember which place but it is very good. The bone-in prime rib was from Kroger. They have them on sale right now. That was a seven pound (two bone) prime rib for about $32.

I typically put in oven at 500 degrees for 15-20 minutes. Then turn oven down to 225-250. And then cook it for about 15-20 minutes per pound. That’s a pretty good reliable method.

TX , really enjoyed this thread. Been checking it out for a while and there is some really good info in here! I haven't read through all of it , and have quite a few other ideas to post later , but just wanted to get in this one since I just did it today for the first time.

Hash browns : The best dang hash browns I've ever had , were this morning. I followed Kents directions to a " T " , except the butter part , since I have some locally made , home grown butter here , i didn't "clearify " my butter , as I really like the stuff I have. Super simple to make , and was really surprised how much better tasting real hash browns were . compared to frozen. Literally a world of difference! For me , it was one big potato ( over a 1/2 of a 12" skillet! ) and right towards the end of cooking , I threw 3 eggs on top to over medium ( did not stir in ). Just a tad bit of salt and pepper and I was good to go. I'm sure you could add some sausage , bacon or what ever else you want as well.

Note : on prepping the shaving , before you put them in the skillet , make sure to rinse them a good 3 - 4 times until you get rid of all that starch and the water is pretty clear.

I didn't get any pictures because I was focused on other stuff but last night I made cioppino with mussels, clams, shrimp, and cod fillets. Wow, it was good!

We wanted to try something different than your usual roast beef/ham/prime rib etc. Christmas dinner. We have some leftovers, if I can get a semi-decent picture of that I'll post it up!

Christmas without the snow and dark just isn't right Tongue

That butt looks great! I smoke more than my fair share of salmon every year but I need to work on more traditional smoked meats. We don't have a very strong culture of BBQ etc. up here in Alaska but I love it nonetheless!

I've yet to smoke salmon, that is high on the list though! Hooked on smoked spatchcocked chickens and smoked tri tip tacos.

TBH google is your friend! I don’t think I’ve ever made a sauce or any recipe twice the same. I always tweak things each time I make anything. For a carolina/mustard based sauce just start with mustard, apple vinegar, brown sugar as a base. Go from there, Depends on the mood I’m in if I want it to go spicy or stick to more tangy with a lil sweet heat. Its fun to play with and a lil goes a long way!
