I know I suck because I didn't get pictures but ill try to use my words. I bought a 14 lb whole turkey and an 8 lb breast. Cooked the whole bird in the roaster like I have for years. Nice and juicy...tradition maintained. I fried the breast. Cajun butter injection and Cajun spice rub. Family laughed their asses off thinking of the fricasseed bird and ensuing house fire. They aren't laughing now. The roaster will be in the next garage sale. I can not begin to tell you how much better that fried bird is. Note: I was very cautious...fire extinguishers at the ready but common sense reduced the risk to nothing.

Homemade, handmade pico de gallo. I refuse to make this stuff with a food processor or buy it from the store.


The flank steak is currently marinating in a Cuban mojo marinade, I’ll get a picture of it when I take it out of the fridge.

We boil the carcass and then later the wife will make turkey pot pies with it. Sometimes turkey and dumplings.

One time you should try frying the corn tortillas in some vegetable oil. About 15-25 seconds per side. Pat dry with a paper towel. That’s how we eat tacos here with white corn tortillas. I’ve always found tortillas a bit dry and pasty so we always lightly fry in oil first.

Looks like the skirt steak turned out awesome!

Normally I would but I was juggling the steak, rice, and beans all at the same time and didn’t have enough burners/hands to pull it off

Turkey on the Green Egg. Pecan wood, lightly smoked. It’s so easy that I’m not sure it qualifies for this thread. Except it tastes to good.

Went for the mini turducken for T-give. Made a sweet sausage onion mushroom rosemary stuffing for the first filling, than a red apple butternut squash celery walnut mix with a little brown sugar and cayenne pepper for the second filling. Smoked one and baked the other. Came out pretty damn delicious! Think next time I’ll add a lil more filling.

I'm no chef but I have one good recipe.

Clog Yo Arteries Tuna Casserole

1: Make regular Mac n' Cheese in pot.
2: Add a can of cream of mushroom soup when done and mix.
3: Add a can of tuna and mix.
4: Add peas or other vegtable (optional)
5: Dice some white onion and carmelize them in sauce pan with hella butter.
6: Pour Mac n' Cheese mixture into saucepan and mix with onions/butter.
7: Add some shredded cheddar or cheese of your choice to saucepan and mix.
8: Pour mixture into buttered glass baking pan
9: Top with more shredded cheese, and either french fried onions or pieces of bread crust.
10: Bake at 350 until heated through.
11: Maybe some shallots for color.

Give it a shot!
