Very nice Bird Scottie.

What kind of smoker is that the reason I ask is it looks like my old trusty Weber that I also use as a smoker.

While it's not an official smoker per se if you use the wood and play with the vents enough it works pretty damn good.

Happy Thanksgiving!

Shit G, our BBQ isnt even a Weber, its just some cheap POS we bought to do a bird last year at the spur of the moment, does a mighty fine job though!

We soaked the wood chips in red wine and water for about 30min, also injected the bird with Italian dressing and stuffed it with garlic cloves and lemon wedges, i made a rub out of random spices we had in the cupboard, nothing special. I cant believe how good it came out, one of the best we have done. Its 1am and i just got up and ate leftovers Cool

Wow sounds really good Scottie. I like some of your ideas I might have to incorporate it into my method here:
I get the mesquite wood from a tree out front that I cut off branches in advance.
I soak those after I chop them up.

Turkey
Stuff with quarter chopped Apple, oranges, celery and a rough chop of onions. I put some clove underneath the skin around the turkey. I use just coarse pepper and some salt.

Put in the pan and use chicken broth to keep it from drying out. I use that to baste with too.

I make an Aluminum tent that goes over the turkey that helps from drying out too.

I got so stuffed on Thanksgiving I had to go for a walk with Bailey to work it off here's some pictures overlooking Phoenix.

Downtown Phoenix the structure on the left is Chase Field where the Diamondbacks play and where they used to hold the Supercross before they moved it to BFE in Glendale. Sad

Right behind the ballpark is Talking Stick Arena where the Suns play.
