Live "One Way Out" from the Fillmore East album. If you listen close, after about the fifth or sixth run through, Dickey does a quick note "skip". I assume to let the other band members know to jump in, or maybe to get on time. Cool either way.
I will go a little off the path and nominate the live version of "Whipping Post". Actually starts off with an awesome driving brief bass intro. then joined by the twin guitar inro.

I've also always loved the intro to Heart's Crazy on You, especially if you toss in the long acoustic prelude. That riff was one of the first I learned on guitar. Another is the Crazy Train riff.
