Millville (admittedly the only one I've been to) is always a great experience. There isn't really 1 vantage point where you can see the whole track, but the track has it all from the infamous sand whoops, big uphills, downhills, doubles and tables. It is a really cool property with the creek running through it and one of the best tracks on the circuit.
Hangtown, Thunder Valley and High Point you can see 90% of those tracks from many spots. Drops off after that in terms of how much you can see at one time. Never been to Dilla, Ironman, Budds or Southwick so can't speak to those but I am guessing they are not as good as the 1st 3 I noted due to have hills blocking your view or trees.
Washougal, Red Bud and Spring Creek are AWESOME to see and experience in person, but not as good for viewing if you like to see everything from one spot. WW and Pala are flat, understood the viewing was tough for the Nationals

Red Bud is my favorite weekend of the summer, you're right though spectating is kind of limited - up by the giant flag is a good spot.

Went to Thunder Valley, High Point, and Ironman this year. Thunder Valley's viewing was the best and it wasn't close IMO. I would say High Point's viewing was better than Ironman's. The trees hurt a lot of viewing there.
I know this is about AMA tracks but if you ever get the chance & have the time & money, Matterly Basin in the UK must have the best viewing of any track in the world.
They have taken a lot of trees out at Washougal. From the hill, you can see pretty much all except the bottom section between finish line and first turn.
