Daniel Boone Motocross is pretty convenient off of I-75 and occasionally do prepped practice on Sunday, worth hitting on your way back north from east Tennessee. South Fork Motoplex would be a solid stop when heading back north from the Nashville area and somewhat close to I-65 or I-165. Soggy Bottom, mentioned above (what up Dave??), was built by a pretty legit track builder and would be convenient if you do head to Virginia or West Virginia, and it's real close to the track JoeWV mentioned above.

Muddy Creek (everybody knows Muddy Creek) outside of Bristol TN ---> I-81 MX (Mike Brown had some involvement until selling his part a couple years ago) in Greeneville, not far from Muddy Creek ---> Windrock Park for some singletrack or downhill MTB in Oliver Springs TN ---> Daniel Boone MX on the way through Kentucky.

https://www.facebook.com/muddycreekraceway Muddy Creek had a practice day scheduled for this passed weekend but cancelled, quite a bit of weather down this way. But I don't know what their typical winter schedule looks like. The promoter Victory Sports usually runs an indoor series around the area, not sure if that effects the MX track or not.
Looks like muddy creek is closed until Feb7.. I81 on the way to Durhamtown is looking like a solid plan tho.
