No, bumping up ISO will be more about the grain, or noise, in the image.
The color issues you are seeing are more a result of mid-day light quality and can be quickly adjusted in post.
(Everything gets a little, or a lot, tweak in post.)

I assume you are shooting JPEG so you might play around with the camera's internal settings to
see you can boost contrast straight out of the camera.

Took these last Tuesday at Fox Raceway (Pala) with my Canon 5D Mark III and Canon 70-200mm f/2.8:









IMO, the lens is almost more important than the camera, and I think it's safe to say that the industry standard for sports is a 70-200 of any brand. The real pros will sometimes have a 300mm or 400mm, but let's not get ahead of ourselves.
