You're seeing the inside of a custom EPS liner. The left side respresents the extra EPS material that is added for thee custom fit, while the right side shows how the material can be shaved down to match your head.

Bell's "Fit Gun" that is used to create a 3D model of your head.
The person being scanned sits on a spinning chair and remains motionless, while the Bell rep spins them to perform the scan.
A scan with a helmet on is also done to see how the goggles set on your face. The Bell crew have multiple goggle options on hand.
In brighter conditions, your 3D self looks... quite interesting.
