Edited Date/Time:
Cycle Ranch (cycleranchmx.com) is far and away the best track to ride on in the area. Bill Swisher's MotoShack has a trackside shop as well as a main location on Hwy 181 on the way to Cycle Ranch. Bill's a great guy and carries most things you might need. He also does service, although the only thing I have had him do is change tires for me (mostly because its worth 20 bucks to me not to spend the afternoon cussing and ending up with bleeding knuckles). Bill also gives a 10% military discount.
If you want off road, most stuff is private. Zar's ranch, run by DBSA, is probably your best bet. http://www.clubdbsa.org/newdbsa1/zarsranch.html
