Haven't really done much with my bike this season, been too busy with work. But I am having an issue with it. Idles fine without the choke on, but as soon as I shut the choke off, it goes to die. Will stay running if you rev it, but backfires/pops quite a bit. My first thought was the headpipe had come loose, as I've dealt with that issue a few times in the past on this bike. But, it seems tight. Is this likely just a dirty carb, or something more serious?

Sounds like the pilot jet may be plugged

I agree, the pilot jet and starter jets are clogged with a clear fuel residue. Remove and clean or just replace. You can remove them both with out even removing the carb as they will come out through the drain plug at the bottom of the carb float bowl.

Check the intake valves as well. I'd probably start by checking the valve clearances. They probably need checked anyway. If they are in spec, then remove the carb and clean it up good, especially the pilot.
