you gonna wrap with banana leaves or burlap?
dry rub?
coal or wood?
how long you going to leave it buried?

BTW asking cause I haven't had the gut to try this myself yet. I will soon but just want to try and get it down before I spend the cash on a pig.

Good questions and it was a fun experience. I will probably do it again but I will probably do things differently next time. We wrapped the pig in banana leaves. One lesson I learned was you probably can't wrap enough leaves around the pig. Maybe it depends on how hot your pit is. My pit was pretty hot and in the areas where I didnt wrap it as much over cooked. The middle was decent and I wrapped that area the most. We used a family recipe for dry rub. Works great on Boston butts and ribs but I may try something different next time. I used hickory in the pit. The hardest part for me was wrapping the pig and I need to research more into that. Maybe string the pig from a tree? The time for cooking depends on heat and size of the pig. I suggest using a thermometer to monitor because the time varies. We stuffed the pig with all kind of veggies and they turned out great!! I had metal cut for the size pig I ordered but he double the size for free because he wants my business. Nice gesture but it threw a wrench in the plans because the pig was a tad bigger the the metal. Go big on your metal for future cooks. Fun experience and a ton of work but would do it again.

It came out ok. Not the best, but I learned from my mistakes if I were to do it again. The pig looks burnt and some areas were but that last picture was before I took the banana leaves off.

Yeah I read its harder to get it right if you take it off early imoto34. Hvaughn88 - the damn gophers are still there haha.
